Breakfast - Sunfire Scrambled Eggs with Sausage and Peppers

 

Ingredients

  • 2 large eggs
  • 1 tablespoon olive oil
  • 2 ounces Italian sausage (casings removed)
  • ½ cup chopped bell pepper (any color)
  • ¼ cup chopped onion
  • ¼ cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a small pan, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon. Remove the sausage from the pan with a slotted spoon, leaving the oil behind.
  2. Add the bell pepper and onion to the pan and cook until softened, about 5 minutes.
  3. In a bowl, whisk together the eggs. Season with salt and pepper.
  4. Push the vegetables to one side of the pan, creating a space for the eggs. Pour in the whisked eggs and scramble until just set.
  5. Return the sausage to the pan and stir to combine with the eggs and vegetables.
  6. Sprinkle the cheddar cheese on top and cook for another minute or two, until the cheese is melted.
  7. Serve immediately.

Tips

  • Feel free to add other keto-friendly vegetables like mushrooms, spinach, or zucchini.
  • For a spicier kick, add a pinch of red pepper flakes while cooking the sausage.
  • If you prefer a creamier texture, add a tablespoon of heavy cream or cream cheese to the scrambled eggs.
  • Enjoy this dish with a side of sliced avocado for extra healthy fats and fiber.
