Ingredients
- 2 large eggs
- 1 tablespoon olive oil
- 2 ounces Italian sausage (casings removed)
- ½ cup chopped bell pepper (any color)
- ¼ cup chopped onion
- ¼ cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a small pan, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon. Remove the sausage from the pan with a slotted spoon, leaving the oil behind.
- Add the bell pepper and onion to the pan and cook until softened, about 5 minutes.
- In a bowl, whisk together the eggs. Season with salt and pepper.
- Push the vegetables to one side of the pan, creating a space for the eggs. Pour in the whisked eggs and scramble until just set.
- Return the sausage to the pan and stir to combine with the eggs and vegetables.
- Sprinkle the cheddar cheese on top and cook for another minute or two, until the cheese is melted.
- Serve immediately.
